Dr. Adekoyeni Oludare Olumuyiwa is an academic and researcher with nearly two decades of experience in Food Science and Technology. He currently serves as the Programme Leader for the Food and Nutrition Research Programme at the Institute of Food Security, Environmental Resources and Agricultural Research (IFSERAR). He is anchored in the Department of Food Science and Technology at the Federal University of Agriculture, Abeokuta, Nigeria.
His research focuses on food processing, post-harvest technology, nutrition, and food safety. Notably, his scholarly work has contributed significantly to upgrading Nigerian rice varieties to enhance their quality and market competitiveness against imported brands. He expanded his work into food product development and value addition, utilisation of underutilised crops to create sustainable and healthy alternatives. In post-harvest studies his findings attenuates from processing, quality control, preservation and storage stability to achieve food security.
As an established research leader, he has served as both Principal Investigator and Co-Investigator on numerous grant-funded initiatives. This includes his impactful work with the Global Alliance for Improved Nutrition (GAIN) team, where the team evaluated compliance with mandatory industrial food fortification and validated i-check devices for rapid micronutrient analysis. Additionally, he has been actively involved in several Institutional Based Research funded by TETFUND.
He teaches and supervises both undergraduate and postgraduate students. He has published 44 articles in reputable local and international journals, as well as 10 edited conference proceedings. An active professional member of the Nigerian Institute of Food Science and Technology (NIFST), he continues to drive advancements in local and global food systems
